RECIPE: Baked Zucchini, Heirloom Tomatoes, and Bread Crumbs from The Martha Stewart Show
Serves 6
3 small, ripe heirloom tomatoes, cored and cut in half 3 small zucchini, cut in half lengthwise 1 cup basil leaves 1 clove garlic, thinly sliced 6 tablespoons olive oil ½ cup bread crumbs water, as needed fine sea salt and freshly ground black pepper 2. Place the basil, garlic, olive oil and bread crumbs in the food processor and blend well. Add water as necessary to create a smooth paste. Season with salt and pepper. 3. Arrange tomatoes and zucchini in an 9”x12”ovenproof gratin dish. Season with salt and pepper and spread the basil mixture over the tomatoes and zucchini. 4. Place in preheated oven and bake until tomatoes and zucchini are softened and crust is golden brown, about 12-15 minutes. You must login or register to comment.
